
Chargrilled Veg Pasta

This simple 15-minute Chargrilled Veg Pasta will fast become your new weeknight go-to. The
frozen ready-cooked veg and storecupboard sauce mean there’s virtually no prep involved,
and you can swap in a different pasta if you prefer. Add a splash of the pasta cooking water
for a more luscious sauce.Time and servings

Ingredients
- 300g bucatini pasta (or other pasta of your choice)
- 1 (500g) pack frozen chargrilled mediterranean vegetables
- 1 splash olive oil
- 1 (340g) jar tomato pasta sauce
- 4 tbsp freshly grated parmesan
- 1 handful torn basil leaves
Method
Step 1
In a large pan of boiling salted water, cook the pasta to pack instructions until al dente.Step 2
Meanwhile, pan-fry the chargrilled veg (from frozen) with a splash of olive oil until piping hot; season well.Step 3
Drain the pasta and toss with the veg and pasta sauce. Divide between 4 pasta bowls and scatter over the cheese and basil. Add a good grind of black pepper, if liked, and serve.
