Ingredients
- 1 tsp Dijon mustard
- ½ tsp runny honey
- 2 tbsp sherry vinegar
- 4 tbsp olive oil
- 4 little gem lettuces, halved lengthways
- 250g frozen petits pois, defrosted
- 25g dill, roughly torn
Method
Step 1
In a small bowl, whisk the mustard, honey and vinegar with 3 tbsp olive oil; season to taste.Step 2
Heat a non-stick pan over high heat. Drizzle the lettuce halves with the remaining oil; season. Fry in batches, cut-side down, for 2-3 mins until charred. Remove to a platter.Step 3
Toss the peas briefly in the hot pan to warm, then tip them over the lettuce. Pour over the dressing and scatter with the dill.
