Inspired by the Vietnamese classic, this Cheat’s Beef Pho uses a handful of shortcut ingredients – beef bone broth, easy aromatics, fuss-free veg and slices of rare roast beef – to deliver a fresh, feel-good bowl in minutes. Ideal for a casual dinner with friends – and you can enjoy the leftovers for lunch the following day.

Ingredients

  • 180g rice noodles
  • 1kg beef bone broth
  • 3 cloves
  • 5 peppercorns
  • 1 cinnamon stick
  • 2 star anise
  • 3 cm piece ginger
  • 3 tbsp fish sauce
  • 100g baby corn
  • 100g sugar snap peas
  • 200g tat soi
  • 300g beansprouts
  • 170g rare roast beef
  • 1 red chilli, sliced
  • 1 lime, cut into wedges for squeezing over

Method

  • Step 1

    Soak the noodles as per pack instructions; drain.
  • Step 2

    In a pan, simmer the broth with the cloves, peppercorns, cinnamon, star anise, ginger and fish sauce for 10 mins.
  • Step 3

    Discard the aromatics with a slotted spoon. Tip in the baby corn and sugar snap peas; cook for 2 mins. Add the tat soi and cook for 1-2 mins more.
  • Step 4

    Divide the noodles and beansprouts between 4 bowls. Ladle over the broth and divide the roast beef on top. Serve immediately with the red chilli scattered over and the lime wedges.
