
Cheat’s Beef Pho

ingredients – beef bone broth, easy aromatics, fuss-free veg and slices of rare roast beef –
to deliver a fresh, feel-good bowl in minutes. Ideal for a casual dinner with friends – and you

Ingredients
- 180g rice noodles
- 1kg beef bone broth
- 3 cloves
- 5 peppercorns
- 1 cinnamon stick
- 2 star anise
- 3 cm piece ginger
- 3 tbsp fish sauce
- 100g baby corn
- 100g sugar snap peas
- 200g tat soi
- 300g beansprouts
- 170g rare roast beef
- 1 red chilli, sliced
- 1 lime, cut into wedges for squeezing over
Method
Step 1
Soak the noodles as per pack instructions; drain.Step 2
In a pan, simmer the broth with the cloves, peppercorns, cinnamon, star anise, ginger and fish sauce for 10 mins.Step 3
Discard the aromatics with a slotted spoon. Tip in the baby corn and sugar snap peas; cook for 2 mins. Add the tat soi and cook for 1-2 mins more.Step 4
Divide the noodles and beansprouts between 4 bowls. Ladle over the broth and divide the roast beef on top. Serve immediately with the red chilli scattered over and the lime wedges.
