
Cheat's Veggie Biriyani

Biriyani is a deliciously spiced Indian baked rice dish known for its complexity and slow cooking, but with a few simple shortcuts here is a Cheat’s Veggie Biriyani version. Perfect for a quick and tasty dinner!Time and servings

Ingredients
- 1 tbsp sunflower oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 cm piece ginger, grated
- 2 tbsp curry paste
- 1 small courgette, sliced
- 1 red pepper, chopped
- 1 carrot, chopped
- 1 (220g) pack Ben's Original™ Pilau Microwave Rice
- 100ml vegetable stock
- 1 small handful fresh coriander, chopped
Method
Step 1
Heat the oven to 180C/ 160C fan/ gas 4. Heat the oil in a frying pan over a medium heat. Add the onion and cook for 10 mins until soft and translucent. Add the garlic, ginger and curry paste and cook for 2-3 mins until smelling fragrant.Step 2
Add the courgette, pepper and carrot and stir through to coat in the spice mix. Fry for 5 mins.Step 3
Meanwhile, tip the Ben's Original Pilau rice into a medium sized ovenproof pan. Add the curried vegetables and pour over the stock. Place in the oven and cook for 15 mins, until the top of the dish is beginning to go crispy.Step 4
Remove the dish from the oven and top with chopped coriander. Serve immediately making sure each dish gets a layer of rice and vegetables.
