Cheese & Mushroom Tarts

Ingredients
- 600 g of chopped mushrooms, canned
- 1 tsp of dijon mustard
- 250 g of cheddar cheese, grated
- 500 g of puff pastry, ready-made block
- 2 medium eggs
Method
Step 1
Pre-heat oven to 220°C/425/gas mark 7, to make these tarts you will need a muffin tray which should hold 12.Step 2
Drain off the mushrooms, and ensure that you have got rid of as much liquid from the mushroom as you can.Step 3
To make the filling in a large bowl beat the eggs and season with salt and pepper, add the dijon mustard, mushrooms & grated cheese, cover the bowl with cling film and place in the fridge until needed.Step 4
Using the puff pastry cut 3 equal strips lengthways and then 4 equal strips widthways, so that you have 12 pieces, place each cube in the muffin holes and shape into balls, then using your fingertips press down, then push the pastry up the sides of the muffin hole.Step 5
Ensure that each hole has room for the filling, you may need to sprinkle flour to help mould the case of the muffin hole with the pastry.Step 6
Using a tsp place the cheese mixture into each of the pasty holes, and fill to the top, bake for 20-25 minutes till golden brown on the top, remove from the oven, after 5 minutes, place each tart on a cooling rack to cool.
