
Cheesy Bodega-Style Eggs

Bodega-style eggs originated in Latin American stores across New York. The filling sees beaten eggs fried with cheese, similar to a thin French omelette, which is then served in a toasted bun - delicious! We’ve used a spicy red chilli-infused cheddar slice topped with oozy mozzarella, but classic cheddar with a sprinkle of sliced salad onion and splash of your favourite hot sauce would be just as tasty. Ingredients
- 1 egg
- 1 tbsp milk
- 1 tsp vegetable oil
- 1 cheese slice
- 1 tbsp grated mozzarella and cheddar cheese mix
- 1 challah roll, halved
- 1 tsp butter
Method
Step 1
Put the egg and milk in a jug or bowl and whisk with a fork until combined.Step 2
Heat the oil in a non-stick frying pan, about 20cm wide, over a medium-low heat. Pour in the egg mixture and gently cook, without stirring, until the egg is set at the edges. Put the slice of cheese in the centre then sprinkle the grated cheese over this and cook for 1 more min.Step 3
Carefully fold the egg over the cheese in the centre to create a square, continue cooking for 1 min.Step 4
Meanwhile, toast the challah roll then spread with butter. Put the cheesy egg on the base of the roll, sandwich on the lid and slice in half to serve.
