Cheesy Leek Jackets

Ingredients

  • 4 baking potatoes
  • 1 tbsp olive oil, plus extra for rubbing
  • 600g leeks, sliced
  • 200g extra-mature cheddar cheese, grated
  • 100ml double cream
  • 0.5 tsp dijon mustard (approx.)

Method

  • Step 1

    Preheat the oven to 200°C/180°C fan/gas 6. Wash and dry the potatoes, then rub with a little oil and pierce a few times with a fork. Bake for 1 hr 15 mins or until the skin is crispy and the middle soft.
  • Step 2

    For the filling, heat 1 tbsp olive oil in a pan over a medium to low heat and gently cook the leeks for 15 mins or until soft and silky.
  • Step 3

    Stir in 150g cheese, the cream and mustard (add a little more if liked); season well.
  • Step 4

    When the potatoes are cooked, cut in half and scoop the flesh into a bowl (keep the skins); stir in the leek mixture until well combined.
  • Step 5

    Preheat the grill to high. Spoon the mixture back into the potato skins, scatter with the remaining cheese and grill until bubbling and golden.
