
Cheesy Leek Jackets

Ingredients
- 4 baking potatoes
- 1 tbsp olive oil, plus extra for rubbing
- 600g leeks, sliced
- 200g extra-mature cheddar cheese, grated
- 100ml double cream
- 0.5 tsp dijon mustard (approx.)
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas 6. Wash and dry the potatoes, then rub with a little oil and pierce a few times with a fork. Bake for 1 hr 15 mins or until the skin is crispy and the middle soft.Step 2
For the filling, heat 1 tbsp olive oil in a pan over a medium to low heat and gently cook the leeks for 15 mins or until soft and silky.Step 3
Stir in 150g cheese, the cream and mustard (add a little more if liked); season well.Step 4
When the potatoes are cooked, cut in half and scoop the flesh into a bowl (keep the skins); stir in the leek mixture until well combined.Step 5
Preheat the grill to high. Spoon the mixture back into the potato skins, scatter with the remaining cheese and grill until bubbling and golden.
