Cheesy Nduja, Tomato and Onion Toastie

Try this next-level cheese toastie with spicy nduja for an indulgent lunchtime treat. Nduja is a fiery, spreadable sausage paste from Italy made with Calabrian red chillies. Here, recipe writer Niamh Shields creates the ultimate power combo by pairing the hot flavours with melted gruyère and mature cheddar.

Ingredients

  • 2 slices of sourdough bread(we used Crosta & Mollica Pane Pugliese Toasting Bread)
  • 1 tbsp of salted butter, for spreading
  • 50 g of nduja(we used Natoora Handmade Nduja from Calabria)
  • 25 g of mature cheddar(we used Wyke Farms Vintage White Cheddar), grated
  • 40 g of gruyère(we used M&S Swiss Le Gruyère), grated
  • 6 cherry tomatoes, quartered
  • 2 slices of red onion, plus extra to serve
  • 1 tsp of oregano leaves, plus extra to serve
  • 1 handful of mixed tomatoes, halved or quartered, to serve

Method

  • Step 1

    Spread one side of each slice of bread with butter. If using fresh nduja, slice into two and flatten each piece into a thin patty, about half the size of the bread. Place both onto the unbuttered side of one slice of bread, then gently press into the surface with your fingers. Nduja contains chilli, so wash your hands afterwards! (Or, if using nduja from a jar, simply spoon on and spread.)
  • Step 2

    Sprinkle the cheeses evenly over the nduja, pressing gently so it all sticks together. Add the cherry tomatoes, slices of onion (separated out and scattered evenly) and the oregano. Place the second slice of bread on top, with the unbuttered side facing inwards, and press down.
  • Step 3

    Heat a frying pan over a medium heat, then add the sandwich. Put a piece of baking paper on top and add a weight to keep it flat – a saucer with a tin or two of tomatoes on top works well. Cook for 3-4 mins until the bottom is golden brown. Remove the weight and paper, carefully turn the sandwich over with a fish slice, then replace the paper and weight. Cook until the other side is golden brown.
  • Step 4

    Cut in half and eat immediately. Try serving with a salad of tomatoes, onion and oregano, dressed with a little red wine vinegar.
