
Cherries steeped in amaretto with whipped cream & yoghurt

Ingredients
- 350 g of cherries, pitted
- 4 tbsp of amaretto
- 1 tbsp of lemon juice
- 250 ml of double cream
- 3 tbsp of greek yoghurt
- 4 soft amaretti biscuits
- 3 tbsp of golden caster sugar
Method
Step 1
Put the cherries, 1tbsp amaretto and 1 tbsp golden caster sugar into a bowl and allow to macerate for 30 mins.Step 2
Put the remaining 3tbsp amaretto, 2tbsp sugar and the lemon juice into a separate large bowl. Pour in the cream and whisk into soft peaks – with this recipe you can stop just as the mixture starts to feel heavy and sits in soft folds.Step 3
Fold through the yogurt and 1tbsp of the juice from the macerated cherries.Step 4
Layer the cherries and cream in glasses, crumble an amaretti biscuit over the top of each and serve.
