Ingredients

  • 300g plain flour, plus extra for dusting
  • 1 tbsp caster sugar
  • 150g salted butter, cold and cubed
  • 1 egg yolk, plus 1 beaten egg
  • 2 (410g) tins black or red cherries
  • 50g ground almonds
  • 50g marzipan, grated
  • 1 lemon, zested and juiced
  • 500g custard or ice cream, to serve (optional)

Method

  • Step 1

    In a food processor, pulse the flour and sugar until combined. Add the butter; pulse to crumbs. Add the yolk and 4-5 tbsp ice-cold water; pulse to a dough. (Or use a bowl: rub in the butter with your fingers; incorporate the yolk and water 1 tbsp at a time, working into a dough.) Flatten into a disc, wrap and chill for 30 mins.
  • Step 2

    For the filling, combine the cherries, almonds, marzipan and lemon zest and juice in a bowl.
  • Step 3

    Preheat the oven to 180°C/160°C fan/gas 4. On a floured surface, roll out two-thirds of the pastry to a disc 5mm thick; line a shallow 23 cm pie dish; trim the edges. Roll out the rest to a 5mm-thick square; cut into 10 long strips about 2 cm wide.
  • Step 4

    Add the filling, then cover with the pastry strips to make a classic lattice pattern – lay 5 strips in one direction, then interweave the remaining 5 in the opposite direction. Brush the pastry with the beaten egg; bake for 1 hr until the filling is bubbling and the 
pastry golden. Leave to stand for 20 mins; serve warm with custard or ice cream, if you like.
