Ingredients
- 150g fresh cherries, 2 reserved whole, remainder destoned and sliced
- 1 sprig mint, leaves picked and very finely chopped
- 1 tsp honey (or use maple syrup)
- 45g dark chocolate, broken into pieces
- 1 tbsp extra-virgin olive oil, plus extra to drizzle
- 4 scoops vanilla ice cream
- 2 pinches sea salt flakes
Method
Step 1
In a small bowl, combine the cherries, mint and honey; mix well and set aside.Step 2
Set a heatproof bowl over a pan of gently simmering water, add the chocolate and melt without stirring. Turn off the heat and stir in 1 tbsp olive oil.Step 3
To assemble, layer the cherries and ice cream between 2 glasses, then pour over the warm chocolate sauce. Top each with a pinch of sea salt flakes, a drizzle of olive oil and a whole cherry. The sundaes can be assembled up to 1 day ahead; freeze until ready to serve. Keep the chocolate sauce chilled; gently reheat and drizzle over just before serving.
