In this grown-up Cherry Float Mocktail, food stylist and writer Emily Jonzen has used a winning combo of cherry soda and almond syrup to deliver big flavours and a refreshing fruity finish, with zero alcohol. Top with a scoop of ice cream for a classic ‘float’. For a delicious boozy version, simply add 100ml amaretto to the mix and blend.Time and servings

Ingredients
- 200 g of frozen pitted cherries
- 2 x 330ml cans cherry soda (we used dalston’s cherry)
- 50 ml of almond syrup (we used giffard orgeat almond syrup)
- 4 scoops of vanilla ice cream (optional)
- 4 fresh cherries
Method
Step 1
Put the frozen cherries, cherry soda and almond syrup into a blender with a large handful of ice; blitz until smooth.Step 2
Serve in glasses with the vanilla ice cream and a cherry, if using.
