Ingredients
- 500 g of cherries
- 6 amaretti biscuits
- 150 g of caster sugar
- 1 tbsp of cherry brandy or kirsch, optional
- 500 g of greek-style yoghurt
- 100 g of crème fraîche
Method
Step 1
Remove all stalks, squash the cherries with the side of a knife and remove stones. Roughly chop and add to a saucepan with the sugar and 2tbsp water. Bubble for 15 mins, until soft. Turn off the heat and stir in the brandy or kirsch, if using. Leave to cool, then whizz to a rough purée with a stick blender – you want chunks of cherry.Step 2
Mix the yoghurt and crème fraîche and spoon into a freezer-proof container. Swirl with the cherries. Freeze overnight before scooping and crumbling amaretti over to serve.
