
Cherry Madeleines

Chef, supper club host and author of Nikkei Cuisine and The Japanese Larder, Luiz Hara whipped up these dainty and delicious Cherry Madeleines. He says, “These have a moreish fruity intensity thanks to the cherries in syrup, which are chopped and folded into the batter as well as being used whole in the centre.” Just the job for afternoon coffee or a teatime treat. Ingredients
- 2 eggs
- 65g caster sugar
- 65g plain flour, plus extra for the tin
- 0.5 tsp baking powder
- 1 pinch salt
- 65g unsalted butter, melted and cooled until tepid, plus extra for the tin
- 50g cherries in syrup, finely chopped, plus 12 whole cherries
- 1 tbsp icing sugar, for dusting
Method
Step 1
In a bowl or stand mixer, whisk the eggs and sugar until light and fluffy. Fold in the flour, baking powder, salt and melted butter. Fold the chopped cherries into the batter and chill for 2 hours.Step 2
Preheat the oven to 200°C/180°C fan/gas 6; grease and flour a 12-hole madeleine or shallow muffin tray. Place a whole cherry into each mould, top with 1 tbsp batter and bake for 8 mins or until golden.Step 3
Remove from the oven, leave to cool for 5 mins, then transfer the madeleines to a cooling rack. Dust with icing sugar before serving. They’ll keep in a sealed container for 3 days.
