Cherry pie quinoa porridge

Cherries and almond butter are perfect partners in our pimped-up porridge with quinoa flakes.

Ingredients

  • 200 g of frozen cherries
  • 1 tbsp of almond butter
  • 2 handfuls of quinoa flakes
  • 2 handfuls of porridge oats
  • 500 ml of hemp milk
  • 1 tbsp of maple syrup, extra to serve
  • 1 tsp of ground cinnamon
  • 1 tbsp of lemon juice
  • 1 handful of sliced almonds, toasted

Method

  • Step 1

    Put the quinoa flakes and oats in a pan with half the milk and bring to a simmer. Leave to bubble for 6-8 mins, topping up with the rest of the milk or hot water if the porridge starts to look dry. It’s ready when the mixture comes together.
  • Step 2

    Meanwhile, put the cherries into another pan with the maple syrup, cinnamon and lemon juice and cook over a medium heat, mashing up the fruit with a spoon a little.
  • Step 3

    When most of the liquid has reduced to a jammy texture, it’s ready to spoon over your porridge. Serve into bowls with a swirl of almond butter, a little extra maple syrup and a sprinkle of seeds, if you fancy (optional).
