
Cherry pie quinoa porridge

Ingredients
- 200 g of frozen cherries
- 1 tbsp of almond butter
- 2 handfuls of quinoa flakes
- 2 handfuls of porridge oats
- 500 ml of hemp milk
- 1 tbsp of maple syrup, extra to serve
- 1 tsp of ground cinnamon
- 1 tbsp of lemon juice
- 1 handful of sliced almonds, toasted
Method
Step 1
Put the quinoa flakes and oats in a pan with half the milk and bring to a simmer. Leave to bubble for 6-8 mins, topping up with the rest of the milk or hot water if the porridge starts to look dry. It’s ready when the mixture comes together.Step 2
Meanwhile, put the cherries into another pan with the maple syrup, cinnamon and lemon juice and cook over a medium heat, mashing up the fruit with a spoon a little.Step 3
When most of the liquid has reduced to a jammy texture, it’s ready to spoon over your porridge. Serve into bowls with a swirl of almond butter, a little extra maple syrup and a sprinkle of seeds, if you fancy (optional).
