Chicken & Avocado Quesadillas

Delicious chicken and avocado quesadillas, made with Hellmann's Mayonnaise, oregano and chilli flakes.

Ingredients

  • 1 tsp of dried chilli flakes, for the marinade
  • 1 tsp of dried oregano, for the marinade
  • 2 tbsp of sweetcorn
  • 4 flour tortillas
  • 1 avocado
  • 2 garlic cloves, for the marinade
  • 4 tbsp of hellmann's light mayonnaise, 2 for the marinade, 2 for the quesadillas
  • 4 boneless chicken thighs
  • 8 cherry tomatoes
  • 1 lime, juiced
  • 50 g of reduced fat mature cheddar
  • 1 pinch of pepper, for the marinade

Method

  • Step 1

    In a small bowl, mix together the mayonnaise, chilli flakes, oregano and garlic. Season with pepper and spread over the chicken thighs.
  • Step 2

    Cover with cling film and leave to marinate in the fridge for an hour, or longer if you have the time.
  • Step 3

    Meanwhile, finely chop the cherry tomatoes and avocado. Sitr through the sweetcorn and the rest of the mayonnaise. Season with black pepper and the lime juice.
  • Step 4

    Once marinated, BBQ the chicken over a medium heat for about 15 minutes, turning frequently. Remove from the heat and allow to cool for a few minutes before chopping roughly and stirring through the quesadilla mixture.
  • Step 5

    Spread the mixture evenly across half of each tortilla, sprinkle with grated cheddar and fold over the empty half of the tortilla, pressing down firmly.
  • Step 6

    Lay the quesadillas over the BBQ and grill over a medium heat for 2-3 minutes on each side. Cut into wedges and serve immediately, with lettuce.
