Ingredients
- 375 g of ready rolled puff pastry
- 3 sprigs of fresh thyme
- 3 cloves of garlic, crushed
- 50 g of butter
- 400 g of chestnut mushrooms
- 300 ml of double cream
- 400 g of chicken breasts, cut into chunks
- 1 onion, diced
- 300 ml of dry white wine
Method
Step 1
Preheat the oven to 200C. Melt the butter in a pan and brown the breast chunks until fully cooked.Step 2
Add the diced onions, garlic, mushrooms and thyme to the pan with the chicken.Step 3
Add the wine, reduce for a few minutes, then add the cream.Step 4
Cook gently for 10 minutes, then transfer into a pie dish approx. 23cm/9 inch diameter. Cover with puff pastry and brush the edges of the pie with water.Step 5
Bake in the oven for approx. 40 minutes until the pie is golden brown and crisp.
