
Chicken & penne pasta with Mediterranean sauce

This is a simple pasta dish with delicious flavours. Use this as a base, substituting the chicken for meat, fish or your favourite vegetables and herbs.Time and servings

Ingredients
- 1 tsp of sea salt
- 1 jar of seeds of change® mediterranean vegetable sauce
- 4 sprigs of basil
- 340 g of penne pasta
- 240 g of chicken breast
- 80 g of chorizo, sliced
- 80 g of parmesan cheese, grated
Method
Step 1
In a large saucepan of boiling, salted water, cook your pasta for 8-10 minutes, drain and reserve.Step 2
On a high heat in a medium sized frying pan gently sauté the chicken fillets for 1 minute each side until golden brown, add the chorizo and cook for one more minute to allow the oils to be released.Step 3
Stir in the pasta sauce, bring to the boil and simmer for 2 minutes.Step 4
Fold in the cooked pasta; divide into four warm bowls and top with the cheese and a sprig of Basil for garnish.
