
Chicken & Vegetable Paella

This delicious Spanish-inspired dish is filled with veggies,
making it the perfect all-round nutritious meal that is incredibly tasty and
easy to cook. We love this recipe as it is filled with Vitamin C which is great
for protecting cells and keeping them healthy.Time and servings

Ingredients
- 1 packet of tilda kids vegetable paella rice
- 0.5 tbsp of olive oil
- 1 spring onion, snipped
- 50 g of chicken breast, cut into small cubes
- 0.5 red pepper, finely sliced
- 25 g of frozen peas
- 1 squeeze of lemon
Method
Step 1
Place the frozen peas in a pan of boiling water and cook for 4-5 minutes.Step 2
Drain and set aside.Step 3
Heat the oil in a pan and add the chopped spring onion and chicken.Step 4
Cook for 5 minutes to soften the onion and seal the chicken.Step 5
Add the pepper and cook for a further 5 minutes.Step 6
Stir in the rice and cook for 3 minutes.Step 7
Stir in the peas and allow to heat through.Step 8
Sprinkle through the parsley and add a squeeze of lemon juice.
