
Chicken, Lemon & Tomato Traybake

Ingredients
- 950 g of chicken drumsticks and thighs
- 500 g of baby potatoes, thinly slices
- 1 tbsp of olive oil
- 2 tbsp of runny honey
- 2 lemons
- 4 cloves of garlic, unpeeled
- 2 beef tomatoes, chopped
- 70 ml of white wine
- 1 large handful of fresh parsley, roughly chopped
Method
Step 1
Preheat the oven to 200C/180F/Gas 6.Step 2
Place sliced potatoes on a roasting tray and toss with 1 tbsp olive oil and season.Step 3
Season the chicken drumsticks and thighs, drizzle with honey and the juice of 1 lemon and place on top of the potatoes and roast for about 20 minutes.Step 4
Add the garlic, segment the 2nd lemon into 8 pieces and place on tray then add the chopped tomatoes to the tray. Baste the drumsticks and thighs and then pour over the wine.Step 5
Place back into oven for a further 30 minutes until drumsticks and thighs are browned and fully cooked (ensuring the juices run clear from the chicken). Sprinkle with fresh parsley before serving.
