
Chicken, Mango and Avocado Salad with a Tangy Green Tabasco Dressing

This tangy jalapeno Tabasco has a subtle and mild flavour that goes perfectly with salads. As the recipe calls for cold cooked chicken, it is ideal for using up that left over roast!Time and servings

Ingredients
- 100 ml of vinaigrette
- 2 oz of pine nuts, toasted
- 2 cooked chicken breasts
- 1 mango
- 1 avocado
- 1 bag of mixed salad leaves
- 3 tbsp of tabasco green sauce
Method
Step 1
Arrange the salad leaves in a bowl. Slice the cooked chicken breast into strips. Peel and slice the mango and avocado taking care to avoid the stone. Add the Tabasco sauce to the vinaigrette in a small glass and mix well.Step 2
Toss the chicken, mango and avocado through the salad leaves and scatter pine kernels on top. Drizzle the salad dressing over the salad and serve immediately.
