
Chicken and Chorizo Pasta

This chicken and chorizo pasta is a rich and spicy Cajun-inspired pasta dish that is a perfect meal option any day of the week. It’s the cayenne pepper and garlic that give this dish its Cajun flavouring. The secret sauce for this dish is in the chorizo, or more specifically, it’s the oil released during the cooking process which infuses the sauce. Flavour packed, it only takes 20 mins to cook and you can use any pasta shape that you’d like. Ingredients
- 0.5 tsp of ground black pepper
- 0.5 tsp of dried thyme
- 4 chicken breasts, sliced into thin strips
- 1 tsp of cayenne pepper
- 1 tsp of dried oregano
- 1 tsp of garlic powder
- 0.5 tsp of smoked paprika
- 225 g of chorizo sausage, sliced
- 3 garlic cloves, finely chopped
- 1 tin of chopped tomatoes
- 200 ml of double cream
- 100 ml of whole milk
- 1 green chilli, finely chopped
- 1 tsp of sea salt
- 250 g of pappardelle pasta
- 1 tbsp of parmesan, shavings
- 1 tsp of chilli flakes, to serve
Method
Step 1
Put the sliced chicken breast in a large bowl, and add the cayenne pepper, black pepper, thyme, oregano, garlic powder and smoked paprika.Step 2
Lightly sauté the chorizo slices in a frying pan over a medium-low heat for 5 mins. Scoop out the chorizo onto a plate, leaving the residual oil in the pan.Step 3
Add the chicken to the pan and brown for 10 mins over a medium heat. Once cooked, scoop the chicken onto the chorizo plate, retaining the residue oil in the pan once again.Step 4
Put a large pan of salted water onto the boil.Step 5
Add the garlic to the chorizo and chicken pan and sweat for 5 mins over a medium heat. Add the chopped tomatoes, double cream, whole milk, green chilli and sea salt and simmer for 10 mins, stirring occasionally. Meanwhile, add the pasta to the pan of boiling water and cook following pack instructions.Step 6
Add the chicken and chorizo to the sauce, mix well and leave to simmer for a further 5 mins.Step 7
Once the pasta is cooked, drain and add to the creamy tomato sauce and mix gently to coat the pasta in the sauce.Step 8
Serve in a wide pasta dish with a sprinkling of grated parmesan and chilli flakes.
