
Chicken and Jerk Mayo Sandwich

Make a chicken sandwich to rival the deli. Our secret? Adding a touch of jerk paste to the mayo and a spoonful of mango chutney. This quick and easy lunch is a winner for busy weekdays – you can use leftover roast chicken, if you have any, or ready-prepared.Time and servings

Ingredients
- 1 tbsp of mayonnaise
- 0.5 tsp of jerk seasoning paste
- 2 slices of fresh bread
- 3 leaves of little gem lettuce
- 2 slices of cooked chicken
- 1 tsp of mango chutney
- 0.25 red onion, thinly sliced
Method
Step 1
Mix the mayonnaise and jerk seasoning paste together and spread a little on two slices of your favourite bread.Step 2
Pile a few leaves of little gem lettuce in, followed by a few slices of cooked chicken (leftovers or ready-prepared). Spoon over the rest of the jerk mayonnaise and the mango chutney.Step 3
Top with a bit of red onion, thinly sliced into half moons, and place the remaining slice of bread on top and serve.
