Ingredients

  • 2 tbsp of olive oil
  • 950 g of ocado chicken drumsticks and thighs
  • 2 parmentier potatoes (ideally 520g)
  • 1 tbsp of cajun or barbecue seasoning
  • 2 ocado peppers, diced

Method

  • Step 1

    Mix together the chicken, oil and seasoning. Place in a large non-stick roasting tray, cover with foil and bake in a preheated oven at 180C for one hour. Pour over both packs of Ocado potatoes and the peppers. For a lighter dish, you may wish to discard the excess oil at this stage from the pan, before adding the potatoes.
  • Step 2

    Mix together all the ingreidents and return to the oven. Cook uncovered at 200C for half an hour, remove from the oven and stir, before returning for a further half an hour.
  • Step 3

    When cooked, the chicken should simply slide off the bone and the potatoes will be nicely browned. Serve with a chilled glass of dry white wine and enjoy!
