
Chicken Burrito

Ingredients
- 2 tbsp of tabasco green sauce
- 115 g of passata
- 4 soft tortillas
- 1 tub of sour cream
- 1 jar of salsa, add some Tabasco to this to give it a smoky twist
- 2 tbsp of fresh lime juice
- 1 tbsp of tabasco green jalapeno sauce
- 2 ripe avocados, peeled
- 0.5 tsp of salt
- 2 skinless chicken breast fillets, diced
- 4 onions, 1 for the chicken, 3 for the guacamole
- 1 large handful of cheese
Method
Step 1
Heat oil in a frying pan to a high heat and add the sliced onion. Cook until soft.Step 2
Lower the heat and add the diced chicken breast. Cook for about 5 minutes, until chicken is cooked through.Step 3
Add the tomato passata and the Tabasco Chipotle sauce. Heat through to allow the tomato mixture to coat all the chicken.Step 4
To make the guacamole combine the three onions, lime juice and Tabasco green sauce in a medium bowl and mash gently with a fork to release the flavour of the onions. Add the avocado and continue to mash until chunky; add salt and pepper to taste. Cover and refrigerate for 1 hour to blend flavours.Step 5
For each serving, add the chicken mixture to the tortillas, and add your preferred amounts of salsa, guacamole, sour creme and cheese.
