
Chicken Burritos

These tasty burritos are great served hot or cold. They can be a little messy to eat though, so rememeber to pack a serviette or tissue! Once cool store in the fridge.Time and servings

Ingredients
- 0.5 tsp of oregano
- 2 tbsp of olive oil
- 1 tsp of ground cumin
- 6 wraps
- 1 tsp of mild chilli powder
- 3 heaped tbsp of salsa
- 3 heaped tbsp of guacamole
- 1 clove of garlic, finely chopped
- 2 peppers, one red and one yellow, cut into thin strips
- 2 chicken breasts, skinless, boneless and thinly sliced
- 1 red onion, cut into slim wedges
Method
Step 1
Place the chicken in a bowl along with 1 tbsp of the oil, the cumin, chilli powder, oregano and garlic, season with salt and freshly ground black pepper. Mix well to coat and set to one side.Step 2
Heat the remaining oil in a large frying pan and cook the onions and peppers until tender. Add the chicken and stir fry for approx 4-5 minutes until the chicken is cooked. Remove from the heat.Step 3
Divide the salsa between three of the wraps and spread. Repeat with the guacamole and the remaining wraps.Step 4
Place a spoonful of the chicken mixture in the centre of one of the wraps, folding to enclose the filling. Repeat with the remaining chicken mixture and wraps.Step 5
Lightly oil a frying pan and heat then add the folded wraps and cook for 1-2 minutes each side, until golden. Serve hot or cold, with salad, extra salsa and guacamole & tortilla chips.
