
Chicken Curry with Parathas

Ingredients
- 1 tbsp groundnut oil
- 200g frozen diced onions
- 1 tsp frozen chopped garlic
- 1 tsp frozen chopped ginger
- 1 (70g) Patak’s Tikka Masala Paste Pot (or use 2 pots, to taste)
- 450g chicken breast chunks
- 300g cherry tomatoes
- 600g frozen chopped spinach with cream
- 4 frozen parathas
Method
Step 1
Heat the oil in a pan and add the frozen onions, garlic and ginger; fry over medium heat for 5 mins. Stir in the tikka masala paste pot(s); add the chicken and cook for 1-2 mins each side.Step 2
Add the cherry tomatoes, followed by the frozen spinach; cover and simmer for 10 mins, stirring occasionally, until cooked through.Step 3
Meanwhile, heat a frying pan over medium-low heat and cook the parathas from frozen, turning, until puffed and golden. Season the curry and serve with the parathas.
