
Chicken Fajita Wrap

Ingredients
- 2 tbsp of olive oil
- 2 peppers, deseeded and finely sliced
- 2 chicken breasts, cut into thin strips
- 2 tablespoons of tomato puree
- 1 tsp of mild chilli powder, or according to taste
- 2 tablespoons of fresh coriander, chopped
- 1 large handful of iceberg lettuce, shredded
- 6 flour tortillas, warmed according to pack instructions
- 6 tablespoons of fresh guacamole
- 1 red onion, peeled and cut into slim wedges
Method
Step 1
Heat the oil in a frying pan and cook the onions for 3 minutes.Step 2
Add the peppers and cook for a further 5 minutes.Step 3
Add the chicken and stir fry for about 5 minutes until the chicken is cooked through.Step 4
Mix together the tomato puree, chilli powder and 3 tbsp water, add to the pan and cook stirring for 1-2 minutes.Step 5
Remove from the heat and stir in the coriander.Step 6
Spread some guacamole down the middle of a tortilla, top this with some of the lettuce, followed by the chicken mixture and a little grated cheese.Step 7
Roll up tightly and serve.
