
Chicken in Sherry

Share the love with these small bites, designed to eat al fresco with friends. Perfect paired with a potato salad, this chicken dish sees bite-sized thigh chunks simmered in sherry, garlic, pepper strips and chilli until a thick sauce is achieved. Serve with bread and butter for dipping.Time and servings

Ingredients
- 1 onion, thinly sliced
- 6 cloves of garlic, quartered
- 100 ml of amontillado sherry, or any other dry dark sherry
- 6 boneless chicken thighs, skinless, cut into bite-size pieces
- 3 tbsp of olive oil
- 1 pinch of ground cinnamon
- 1 red pepper, deseeded and cut into 1cm strips
Method
Step 1
Heat 1tbsp oil in a pan over a medium heat. Cook the onion until soft and starting to turn brown.Step 2
Lightly season the chicken, while the rest of the olive oil heats in the pan. Add the chicken and brown all over, before removing.Step 3
Now add the garlic to the pan and cook for 2-3 mins, until golden brown. Follow with the cinnamon, pepper strips and chilli, then cook for 2 mins.Step 4
Pour in the sherry and return the chicken to the pan, covering with a lid. Simmer for 10 mins, stirring occasionally. Remove the lid and cook for another 10 mins until the sauce thickens. Serve with bread to dip in the sauce.
