Ingredients

  • 4 chicken thighs, bone in and skin on
  • 3 tbsp of olive oil
  • 0.5 cup of chestnut mushrooms, sliced
  • 0.5 cup of chicken broth
  • 1 cup of heavy whipping cream
  • 1 tsp of ground mustard
  • 1 tsp of garlic powder
  • 1 handful of parsley, freshly chopped for garnish
  • 1 pack of just a splash culinary marsala

Method

  • Step 1

    Add 1 tablespoon olive oil to a large pan (or skillet) over medium heat. Add the chicken and lightly season with salt and pepper. Cook throughout until lightly browned on both sides. Remove chicken and set aside on a plate.
  • Step 2

    Add 2 more tablespoons of olive oil to a medium sized pan, over medium heat.
  • Step 3

    Add the mushrooms and sauté for 1 - 2 minutes.
  • Step 4

    Add marsala and bring to a boil over medium-high heat for 1 - 2 minutes, allowing the alcohol to cook off.
  • Step 5

    Add the chicken broth, heavy whipping cream, ground mustard, garlic powder and seasoning.
  • Step 6

    Bring to a boil, then reduce heat to a simmer for about 5 minutes or until it starts to thicken.
  • Step 7

    Place the chicken back in the sauce and continue to simmer for about 1-2 minutes.
  • Step 8

    Finish with the fresh parsley and serve.
