Ingredients
- 2 tbsp of sesame oil
- 1 tbsp of thai fish sauce
- 1 tsp of caster sugar
- 1 clove of garlic, crushed
- 200 g of egg noodles
- 1 limes, juice and zest
- 4 spring onions, sliced
- 250 g of carrots, peeled and cut into slices
- 1 tbsp of mint
- 2 tbsp of coriander
- 3 cm of root ginger, peeled and finely grated
- 1 red chillies, deseeded and finely chopped
- 3 tbsp of olive oil
- 2 chicken breast fillets, skinless, sliced
Method
Step 1
Mix the lime zest and juice with the sugar, fish sauce, ginger, garlic, chilli and 1 tbsp of the oil and set to one side.Step 2
Cook the noodles according to the pack instructions. Drain thoroughly and stir through the sesame oil. Heat the remaining oil in a large frying pan or wok and stir fry the chicken for 4-5 minutes until golden in places and cooked through.Step 3
Add the carrots, spring onions and noodles and stir fry until piping hot. Remove from the heat add the dressing and herbs, toss to mix and serve.
