Ingredients

  • 2 little gem lettuces, sliced into quarters
  • 1 tbsp olive oil, for brushing
  • 1 (240g) pack roast chicken breast fillets, sliced
  • 1 (85g) pot edamame soy beans
  • 2.5 cm piece ginger, grated
  • 2 tbsp soy sauce
  • 2 tbsp white wine vinegar
  • 2 tsp dijon mustard
  • 40g croutons
  • 1 tbsp roasted peanuts, chopped
  • 15g mint leaves, roughly torn

Method

  • Step 1

    Brush the lettuce quarters with olive oil and season. Sear in a hot griddle pan for 90 secs each side; remove to a plate. Top with the sliced chicken and edamame beans.
  • Step 2

    Put the ginger into a clean jar with the soy sauce, vinegar and mustard; put the lid on and shake well. Pour over the salad.
  • Step 3

    Finish with the croutons, chopped nuts and torn mint.
