Ingredients

  • 1 tbsp of salsa
  • 1 chicken leg
  • 1 pitta bread
  • 1 little gem lettuce, shredded
  • 1 shallot, finely sliced
  • 1 tbsp of tahini
  • 4 cherry tomatoes, sliced
  • 2 cornichons, sliced

Method

  • Step 1

    Shred the chicken leg using two forks.
  • Step 2

    Toast the pitta and carefully slice open. If preparing ahead, allow the pitta to cool first.
  • Step 3

    Fill the pitta with the little gem, chicken, cherry tomatoes, shallot and cornichons. Mix together the salsa and the tahini and add 1-2tsp of water to make a spoonable sauce. Pour over the filling and either eat immediately or wrap in foil for later.
