Chicken Tikka Naan Roll

Once you try the viral Chicken Tikka Naan Roll from Michelin starred restaurant, Gymkhana, it will become a lunchtime staple. Zingy green tikka sauce, made from lemon, coriander and mint, is the perfect accompaniment to the deliciously charred chicken in classic tandoori flavours. Next time, try with sliced paneer and a handful of spinach.

Ingredients

  • 500g chicken thigh or breast, thinly sliced
  • 3 tbsp Gymkhana Classic Tandoori Marinade
  • 3 tbsp Gymkhana Green Tikka Marinade
  • 2 tbsp natural yogurt
  • 2 garlic naan
  • ¼ cucumber, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 red or green pepper, thinly sliced
  • 1 handful coriander
  • 2 tbsp tamarind chutney (optional)
  • ½ lemon, to squeeze

Method

  • Step 1

    Put the chicken in a bowl with the Classic Tandoori Marinade, mix to combine then cover and leave in the fridge for at least 1 hr.
  • Step 2

    Mix 1 tbsp Green Tikka Marinade with the yoghurt until smooth, then set aside until ready to serve.
  • Step 3

    Set a grill to medium. Spread the chicken over wire rack set over a baking tray. Grill for 4-5 mins, turning halfway, until cooked through and charred.
  • Step 4

    Warm the naan to packet instructions. Then spread each with 1 tbsp Green Tikka Marinade.
  • Step 5

    Top with grilled chicken, veg, coriander, most of the green chutney and tamarind chutney, if using.
  • Step 6

    Squeeze over the lemon, roll up then slice to serve with the remaining chutney on the side.
