
Chicken with a Parmesan Pesto Crust

This
quick dinner is great served alongside buttered new potatoes, and so seasonal
vegetables. It is great for the whole family to enjoy as a quick and simple mid-week

Ingredients
- 5 tbsp of sacla’ classic basil pesto
- 4 boneless chicken thighs, (Boneless, Skin removed)
- 1 tbsp of olive oil
- 100 g of fresh breadcrumbs
- 45 g of parmesan, (Grated)
- 45 g of pine nuts
- 3 tbsp of fresh parsley, (Chopped)
Method
Step 1
Preheat the oven to 200°C/180°C fan Lightly grease a baking tray with a little oil.Step 2
In a small bowl mix together the breadcrumbs, Parmesan, pine nuts and parsley.Step 3
Season with salt and pepper.Step 4
Spread the Sacla’ Pesto all over the chicken thighs, then cover generously with the cheesy crumb mixture.Step 5
Drizzle with a little oil and cook for 15 - 20 minutes, until the crumbs are golden and the chicken cooked through.
