
Chicken with apple in bacon

Ingredients
- 3 eating apples, peeled
- 3 spring onions, finely sliced
- 25 g of gouda cheese, grated
- 4 skinless chicken breasts
- 8 rashers of streaky bacon
- 1 tbsp of olive oil
- 300 ml of dry cider
- 1 tbsp of wholegrain mustard
- 1 tsp of cornflour
Method
Step 1
One at a time, layer the chicken breasts between cling film and beat to even thickness. Coarsely grate 1 apple and mix with the onion and cheese, then divide this down the centre of the fillets, before rolling each in 2 rashers of bacon.Step 2
Fry for about 10 minutes, turning occasionally, until browned. Core and thinly slice the remaining apples and add to the pan. Pour in the cider, bring it to the boil, then gently simmer for 15 minutes. Remove the chicken and keep warm.Step 3
Mix the mustard and cornflour with 2 tsp of cold water, then stir into the sauce until thickened. Pour over the chicken to serve.
