
Chicken with Mushrooms and Black Bean Sauce

Ingredients
- 2 tbsp of vegetable oil
- 2 chicken breast fillets, sliced
- 2 garlic cloves, peeled and crushed
- 5 cm of root ginger, peeled and grated
- 350 g of open cup mushrooms, halved
- 4 spring onions, trimmed
- 4 tbsp of chinese cooking wine
- 4 tbsp of black bean sauce
- 1 pack of noodles, cooked according to pack instructions, to serve
- 200 g of baby pak choi
Method
Step 1
Heat the oil in a wok or large frying pan, add the chicken and stir fry over a high heat for 5 minutes or until pale golden. Add the garlic, ginger and mushrooms and stir fry for 3-4 minutes.Step 2
Cut the spring onions in half lengthways then each into 4cm lengths; cut the pak choi to in half lengthways. Add the onions and pak choi to the pan along with the wine and black bean sauce. Stir fry for 2-3 minutes or until the pak choi stems are tender. Serve immediately with noodles, or rice if you prefer.
