
Chickpea Curry

Chickpeas are such a fantastic ingredient, they have a lovely nutty flavour and are a good source of zinc and protein - and used liberally in Indian cuisine.This recipe is a firm favourite and is really hearty - the perfect winter warmer.Time and servings

Ingredients
- 1 tbsp of vegetable oil
- 500 g of canned chickpeas
- 150 g of onion, chopped
- 200 g of chopped tomatoes
- 2 tbsp of patak's tikka masala paste
- 1 tbsp of patak's madras curry paste
- 0.5 tsp of sugar
- 1 tbsp of fresh coriander
Method
Step 1
Heat the oil in a pan and saute the onions until light golden brown (about 3-4 minutes).Step 2
Add the Patak's Tikka Masala and Patak's Madras Pastes and saute for a further one minute.Step 3
Add the tomatoes and cook for a further 1 minute.Step 4
Add the cooked chickpeas, sugar and water and mix well. Slow cook on a medium heat for 1 1/2 to 2 hours.Step 5
Garnish with chopped coriander and serve with warm Patak's Chapattis or rice.
