Chickpeas are mashed and blended with tangy soya yogurt and briny capers to create a delicious and satisfying vegan alternative. Ingredients
- 2 x 400g tins chickpeas, rinsed and drained
- 75g soya yoghurt, we used Alpro
- 1 tsp Dijon mustard
- 1 red onion, finely chopped
- 1 tbsp capers, roughly chopped, plus 2tbsp brine
- 1 small handful fresh parsley, finely chopped
- 6 wholemeal brown pitta breads, we used M&S Wholemeal Pittas
- 6 tbsp pesto, we used M&S Green Pesto
- 3 tomatoes, finely sliced
- 2 avocados, sliced
Method
Step 1
In a bowl, roughly mash the chickpeas with a fork or masher. Stir in the yoghurt, mustard, red onion, capers, brine, parsley. Season well with salt and pepper.Step 2
Toast the pittas until warm and crisp.Step 3
Spread the pesto over the base of each pitta. Top with the smashed chickpeas, tomato slices and avocado. Serve immediately.
