Ingredients
- 1 tsp dijon mustard
- 2 tsp wholegrain mustard
- 1 tsp honey
- 1.5 tbsp olive oil
- 1 lemon, juiced
- 2 chicory heads (red or white), leaves separated
- 1 apple, thinly sliced
- 25g walnuts, toasted
- 10g parmesan (or vegetarian Italian hard cheese), shaved
Method
Step 1
In a small bowl, whisk together the dijon and wholegrain mustards, honey, oil, lemon juice and a pinch of salt, until emulsified.Step 2
Arrange the chicory and apple on a serving plate, and drizzle over the dressing evenly. Top with the walnuts and cheese, and serve.
