Ingredients

  • 1 tsp dijon mustard
  • 2 tsp wholegrain mustard
  • 1 tsp honey
  • 1.5 tbsp olive oil
  • 1 lemon, juiced
  • 2 chicory heads (red or white), leaves separated
  • 1 apple, thinly sliced
  • 25g walnuts, toasted
  • 10g parmesan (or vegetarian Italian hard cheese), shaved

Method

  • Step 1

    In a small bowl, whisk together the dijon and wholegrain mustards, honey, oil, lemon juice and a pinch of salt, until emulsified.
  • Step 2

    Arrange the chicory and apple on a serving plate, and drizzle over the dressing evenly. Top with the walnuts and cheese, and serve.
