Children’s Crispy Air-Fryer Cauliflower

Ingredients

  • 2 medium eggs 

  • 2 garlic cloves, crushed, plus ½ grated garlic clove for the dip

  • 1 tbsp finely chopped flat-leaf parsley
  • 100g panko breadcrumbs
  • 1 cauliflower, cut into florets (to give approx. 400g)

  • 1 tsp olive oil, plus 1½ tbsp 

  • 1 lemon, cut into wedges, plus ½ lemon, juiced, for the dip

  • 200g Greek yoghurt

  • 75g grated cucumber (water squeezed out)


Method

  • Step 1

    In a large bowl, whisk the eggs with the 2 crushed garlic cloves, flat-leaf parsley and a pinch of pepper. Put the panko breadcrumbs in a separate shallow bowl.
  • Step 2

    One at a time, dip the cauliflower florets in the batter; allow the excess to drip off. Roll in the breadcrumbs, turning to coat, and set aside.
  • Step 3

    Preheat an air fryer to 180°C for 2 mins. Brush the bottom of the air fryer basket with 1 tsp olive oil; cook the cauliflower in 3 batches for 10-12 mins each, drizzling each batch with ½ tbsp oil and turning halfway, until crisp and golden.
  • Step 4

    Mix the Greek yoghurt with the grated cucumber, garlic and lemon juice to make a dip. When the cauliflower is cool enough to handle, serve with the lemon wedges and yoghurt dip.
