Ingredients
- 750g baby potatoes, such as Jersey Royals, halved or quartered
- 25g unsalted butter
- 1 tbsp spice paste
- ½ lime, zested
- 1 tbsp salted peanuts, crushed
Method
Step 1
Steam or boil the potatoes for 20 mins or until tender; drain.Step 2
Return to the pan and toss with the butter and spice paste until coated; season to taste.Step 3
Finish with a grating of lime zest and the crushed peanuts scattered over.
