Ingredients

  • 750g baby potatoes, such as Jersey Royals, halved or quartered
  • 25g unsalted butter
  • 1 tbsp spice paste
  • ½ lime, zested
  • 1 tbsp salted peanuts, crushed

Method

  • Step 1

    Steam or boil the potatoes for 20 mins or until tender; drain.
  • Step 2

    Return to the pan and toss with the butter and spice paste until coated; season to taste.
  • Step 3

    Finish with a grating of lime zest and the crushed peanuts scattered over.
