Chilli bean king prawn noodles

Juicy king prawns smothered in a classic Chinese fermented chilli bean paste and served with chewy noodles and crunchy beansprouts.

Ingredients

  • 2 nests dried egg noodles
  • 2 tbsp of vegetable oil
  • 1 bunch spring onions, green ends sliced into 5cm lengths and remaining parts finely sliced
  • 340 g of raw king prawns, peeled and deveined
  • 50 g of beansprouts
  • 3 tbsp of chilli bean sauce

Method

  • Step 1

    Soak the noodle nests in just-boiled water for 5 mins until soft, then drain and set aside.
  • Step 2

    Heat the oil in a large non-stick frying pan or wok, add the spring onion greens and half the finely sliced spring onion and fry for about 30 secs until fragrant. Add the prawns and fry until pink, then add the beansprouts and continue to fry for 2 mins.
  • Step 3

    Add the chilli bean sauce along with the drained noodles and stir to combine with the other ingredients. Continue to fry for a further 3 mins.
  • Step 4

    Transfer to a warm serving plate and garnish with the remaining spring onion.
