
Chipolata Fajitas

Ingredients
- 1 pepper, seeds removed and sliced
- 8 chipolatas
- 0.5 tsp of smoked paprika
- 0.5 tsp of ground cumin
- 0.5 tsp of dried oregano
- 2 tbsp of olive oil
- 1 red pepper, seeds removed and sliced
- 1 onion, halved and thinly sliced
- 4 tortilla wraps, to serve
- 200 g of guacamole, to serve
- 200 g of tomato salsa, to serve
- 75 ml of soured cream, to serve
- 1 small handful of fresh coriander, chopped, to serve
Method
Step 1
Pre-heat the oven to 190C/380F/Gas mark 5.Step 2
Place all the ingredients in a large bowl and mix well, making sure the herbs and spices coat the sausages, peppers and onion.Step 3
Transfer onto a large baking tray and cook in the oven for 15-20 minutes or until the sausages are cooked through.Step 4
Place a wrap on a plate and spread with guacamole, salsa and soured cream.Step 5
Top with two sausages per person along with a helping of the peppers and onion. Sprinkle with chopped coriander, wrap and enjoy!
