This gluten free twist is great served warm with melted butter! No need for anything else although an extra spreading of chocolate spread wouldn't go amiss!

Ingredients

  • 200 g of gram flour
  • 7 g of fast acting dried yeast
  • 55 g of golden caster sugar, plus 1 tbsp for the filling
  • 200 g of gluten free bread flour, plus extra for kneading
  • 1 pinch of ground cinnamon
  • 0.5 tsp of salt
  • 55 g of salted butter
  • 1 large egg, beaten
  • 120 ml of milk, lukewarm, plus extra to glaze
  • 60 g of plain dark chocolate, finely chopped or grated
  • 60 g of pecan nuts, roughly chopped
  • 2 tbsp of icing sugar

Method

  • Step 1

    Preheat the oven to 375°f, gas mark 6, 200°C (180°C Fan assisted)
  • Step 2

    Activate the yeast in the lukewarm milk
  • Step 3

    Sift the flours and salt into a food processor with a dough hook alternatively you can do this by hand
  • Step 4

    Rub in the butter together with the sugar
  • Step 5

    Make a well in the centre of the flour and pour in the yeast mixture, together with the beaten egg
  • Step 6

    Mix to a dough, add more liquid if it feels to dry or a little flour if it feels too wet
  • Step 7

    The mixture will be quite dense
  • Step 8

    Tip onto a lightly floured surface and knead until smooth
  • Step 9

    Place into a clean bowl, cover and leave in a warm, draught-free place to rise
  • Step 10

    Line a 2lb loaf tin with parchment paper
  • Step 11

    Tip the dough mixture out on a lightly floured surface and flatten out with your hands like a large pizza base
  • Step 12

    Sprinkle the base with 1 tbsp. sugar and cinnamon.
  • Step 13

    Sprinkle with ¾ of the chocolate and nuts, then roll into a firm log.
  • Step 14

    Cut down the length of the log leaving the top in tact.
  • Step 15

    Then carefully fold over the dough to create a twist.
  • Step 16

    Press the ends together making sure the middle section is interwined.
  • Step 17

    Carefully lift the cake into the loaf tin.
  • Step 18

    Brush with milk to glaze, then sprinkle with remaining chocolate and pecans .
  • Step 19

    Bake in the pre heated oven for 25-30 minutes. Remove from the oven and leave to cool for 10 minutes, transfer to wire rack to cool. In a small bowl add the icing sugar and a little cold water, then drizzle over the cake. Enjoy!
