
Chocolate Coconut Date Bars

Ingredients
- 360g medjool dates, pitted
- 100g cacao powder
- 60g desiccated coconut, extra to sprinkle
- 30g sunflower seeds, extra to sprinkle
- 2 tbsp honey
Method
Step 1
Line a small square baking tin with greaseproof paper (ours was 20cm).Step 2
Put the medjool dates, cacao powder, desiccated coconut, sunflower seeds, honey, a pinch of salt and 2 tbsp water in a food processor and pulse in bursts until smooth. This gets quite sticky, so you may have to scrape down the sides and pulse a few times.Step 3
Empty the mixture out into the tray and press firmly to fill the square evenly. Sprinkle a little more desiccated coconut and a few sunflower seeds over the top; press again and place in the fridge for 10 mins before cutting into bars. Store in the fridge.
