
Chocolate Crisp Cookies

Easter chocolate, ready salted crisps and cookies… we’ve combined them for a seriously fun and tasty recipe that is sure to get everyone talking. A classic chocolate cookie dough is rolled in crunched up crisps then baked for a touch of salt and added crisp, a surefire winner at the next bake sale.

Ingredients
- 125g salted butter, softened
- 125g soft light brown sugar
- 100g light muscovado sugar
- 1 large egg
- 1 tsp vanilla extract
- 250g plain flour
- 1½ tsp baking powder
- 90g pack Speckled Eggs, crushed
- 60g dark chocolate, chopped
- 25g salted crisps
Method
Step 1
Put the butter and sugars in a large mixing bowl and beat with an electric hand mixer until pale, about 4-5 mins, or in a stand mixer for 3 mins. Add the egg and vanilla then beat until just combined.Step 2
Tip in the flour, pinch of salt and baking powder then gently beat until well combined.Step 3
Add most of the chocolate and fold until evenly spread through the mix. Roll into 16 even balls.Step 4
Tip the crisps into a bowl then crunch up and add the cookie balls, roll and squash the crisps into the cookie, spread over a baking sheet and chill for at least 4 hours, or overnight.Step 5
When you’re ready to bake, heat the oven to 180°C/ 160°C fan/ gas 4. Line a baking sheet with non-stick paper and evenly spread the cookies across the baking tray and bake for 12-15 mins.Step 6
Transfer, on the baking paper, to a wire rack and allow to cool and set.
