Ingredients

  • 125g salted butter, softened
  • 125g soft light brown sugar
  • 100g light muscovado sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 250g plain flour
  • 1½ tsp baking powder
  • 90g pack Speckled Eggs, crushed
  • 60g dark chocolate, chopped
  • 25g salted crisps

Method

  • Step 1

Put the butter and sugars in a large mixing bowl and beat with an electric hand mixer until pale, about 4-5 mins, or in a stand mixer for 3 mins. Add the egg and vanilla then beat until just combined.
  • Step 2

Tip in the flour, pinch of salt and baking powder then gently beat until well combined.
  • Step 3

Add most of the chocolate and fold until evenly spread through the mix. Roll into 16 even balls.
  • Step 4

Tip the crisps into a bowl then crunch up and add the cookie balls, roll and squash the crisps into the cookie, spread over a baking sheet and chill for at least 4 hours, or overnight.
  • Step 5

When you’re ready to bake, heat the oven to 180°C/ 160°C fan/ gas 4. Line a baking sheet with non-stick paper and evenly spread the cookies across the baking tray and bake for 12-15 mins.
  • Step 6

Transfer, on the baking paper, to a wire rack and allow to cool and set.
