
Chocolate Rocky Road

Indulgent, moreish and wickedly delicious, this sophisticated version of rocky road makes a perfect treat for parties or given away as small gifts. Bonne Maman’s recipe uses the flavourful Berries & Cherries Conserve, but to ring the changes, try the tangy Blackcurrant Conserve instead.

Ingredients
- 80 g of milk chocolate maltesers
- 400 g of milk or plain chocolate
- 150 g of unsalted butter, diced
- 50 g of toasted hazelnuts
- 150 g of mini marshmallows, (or large ones chopped into smaller bites)
- 150 g of digestive biscuits, roughly crushed
- 4 tbsp of bonne maman berries and cherries
Method
Step 1
Break the chocolate into a medium bowl and add the butter. Sit the bowl over a pan of gently simmering water, making sure the bowl doesn’t touch the water. Leave to melt for 10-15 min.Step 2
When both have melted, stir quickly together until smooth. Add all the remaining ingredients, except the conserve.Step 3
Spoon one third of the mixture into the prepared tin then dot the surface with half the conserve. Spoon half the remaining mixture into the tin and dot with the remaining conserve. Finish with a layer of chocolate mixture. Level the surface and cover with clingfilm. Chill overnight.Step 4
Turn out the rocky road and cut into bite-size chunks.Step 5
To freeze: chill, pack and freeze at the end of step 4.Step 6
To use: thaw overnight in the fridge.
